According to MacRumors, the iOS users will be able to watch YouTube videos in HDR on iPhone X. However, this feature is not yet available on iPad Pro models. You can access the feature by tapping on the three dots located on the top right side of the display and selecting quality.
You should do this step while playing a video and select the suitable quality. It is to be noted that you need to find a specific HDR video to experience the feature with iPhone X. Even though iPhone 8 series provides support for HDR 10, you have to make use of the dithering technology to deliver quality videos.
